Are you a big fan of beef stew, but feel bad eating the Campbells version? No matter your cooking skills, you can make this delicious slow cooker beef stew, easy and fast!
I have a habit of taking recipes and tweaking them. This is one I typically change, due to my husband having an allergy to celery (and he also claims carrots, but our kiddos love them, so they stay!).
Ingredients:
•2 lbs beef stew meat (cubed)
•1/2 teaspoon Salt
•1/2 teaspoon pepper
•1 clove garlic (minced)
•1 teaspoon paprika
•1 teaspoon Worcestershire sauce
•1 onion (chopped)
•1 1/2 cup beef broth
•5-10 Yukon gold potatoes (Cut into 3/4 in chunks)
•1 lb bag baby carrots (chopped in half)
•1 celery stalk (chopped and optional!)
Now, I have two different versions of instructions. In the first set of instructions, I feel the potatoes and carrots can get too soft, and may become mushy. In the second set of instructions, I feel the potatoes and carrots are harder. I also feel that the second instructions allows for the meat to cook first and fall apart.
Instructions (Version I):
1. Prepare vegetables
2. Add all ingredients to slow cooker
3. Cook on low 8 hours, stirring occasionally
Instructions (Version II):
1. Prepare vegetables
2. Add meat and cook low 4 hours
3. Add vegetables and cook on low for an additional 4 hours
**Also, I’ve added onion soup mix to this recipe to add more flavor-if you want to try that!
