Where are my goat cheese fans at?! If you’ve never had it, you need to try it! I will say that being a former picky eater (weird, right?), the texture of goat cheese is different. It’s flavor is amazing, though, and you can make so many meals with it! I took the traditional bacon wrapped jalapeños, and made some twists to make a not-so-boring appetizer. First, the goat cheese. Regular bacon wrapped jalapeños have cream cheese, so this is the most significant change in my bacon wrapped goat cheese pepper poppers. Second, jalapeños are hit or miss when it comes to spiciness. In order to make a kid and adult friendly appetizers, I chose mini peppers. They have the same texture and poppable size, but sans the mouth burning experience.
So, how do you make these bacon wrapped goat cheese mini peppers? Simple!
I used an herb goat cheese, but you are free to use whatever type of goat cheese you like. I just love the flavors in this one, which I found at Meijer. I’m sure you can find it or something similar in the “speciality” cheese section of your grocery store!
Also, feel free to cut your peppers in half, or cut a slit into the pepper. I find the slit easier to keep the stem on, but if you cut them in half, then it makes more appetizers for people to eat.
Admittedly, I don’t like to use toothpicks to keep the bacon on the peppers. The last time I had a jalapeño popper, I put the whole thing in my mouth… INCLUDING THE TOOTHPICK. Having kids, and being impatient, the toothpick is a no-go for me, and it seems a little dangerous…

- 1 lb Mini Peppers
- 8 oz Goat Cheese
- 1 Package Bacon
Ingredients

- Preheat oven to 400 degrees.
- Allow goat cheese to soften, and beat slightly, so that it is smooth.
- Cut mini peppers in half lengthwise.
- Fill each pepper half with goat cheese.
- Wrap each pepper with a slice a bacon (I start from the bottom of the jalepeño and work my way up to the top).
- Align peppers on a baking sheet.
- Bake 15 minutes, or until desired doneness of bacon.
I’d like to add that any of you on the keto diet can eat this yummy appetizer, since goat cheese is a full-fat dairy product. Woo-hoo!
